This
Chenin Blanc was made in a style akin to Vouvray from the Loire
Valley in France. Though Chenin Blanc has
been a mainstay for centuries in France,
in the U.S.
it has fallen in and out of trendy favor.
It is a classic variety that deserves reverent attention to the
traditions that have made it great. In
particular, we embrace the tradition of leaving a slight amount of residual
sugar to balance the natural acidity of the grape. This wine has a lovely and unique scent that
reminds one of quince, citrus, and aromatic white flowers. Growing in a cool climate with warm days and
cool nights allows the vines to retain their acidity, producing a wine in which
the sweetness is well balanced with its natural acidity.
